Boulder has many burger joints, but only a handful worth planning a day around. This list has been running since 2013, and we've updated it for 2026: the survivors are still here on merit, and the newcomers earned their spots.
The Sink
The Sink on the Hill passed its hundredth birthday in 2023, which makes it older than most of the city's institutions. The late Robert Redford mopped its floors as a CU student in the fifties, presidents have stopped in, and the Sink Burger is still the order. Low ceilings covered in graffiti, no reservations, exactly as it should be.
Mountain Sun
The Date Night Burger and the Junk Burger are both still on the menu at the Mountain Sun on Pearl, made with Colorado beef and best eaten alongside something brewed thirty feet away. The pub has been at it since 1993 and remains the most Boulder answer to "where should we get a burger?"
West End Tavern
The West End at 926 Pearl backs its burgers with a barbecue program and one of the deepest bourbon lists in the city, and the building itself has been serving people for well over a century. Eat on the roof deck if the weather cooperates, which in Boulder it usually does.
Wild Pastures Burger Co.
Wild Pastures at 2805 Pearl built its whole menu on 100 percent grass-fed beef from regenerative American family farms, down to fries cooked in beef tallow. It's the burger for the Boulderite who reads sourcing footnotes, and it tastes like the footnotes were worth it.
C Burger
The buzziest newcomer: C Burger opened at 921 Pearl in 2025 doing crisp-edged smash burgers with premium Colorado beef at fast-casual prices. The line moves fast and so should you.
Snarfburger
From the people behind Snarf's Sandwiches, Snarfburger at 2000 Arapahoe is a proper burger stand: burgers, fries, frozen custard, done. Sometimes that's the entire assignment.
Blackbelly Market
Top Chef winner Hosea Rosenberg's Blackbelly runs its own whole-animal butcher shop, and the burger that comes out of it belongs on this list even at a Michelin-listed restaurant's prices. East Boulder location, worth the drive.
Oak at Fourteenth
Oak's signature burger comes off the oak-fired grill at 1400 Pearl, dinner only. It's the burger you order at a nice restaurant without feeling like you wasted the reservation.
Two names from the original version of this list are gone: Rueben's Burger Bistro closed in 2019 and Drakes Haus back in 2014. And pour one out for the Dark Horse, which closed in 2026 after 51 years on Baseline. Boulder's burger scene is deeper now than it's ever been; the bar these places set is why.
