Burger Bliss & Craft Concoctions: Eureka! in Boulder

I’m going to make a bold statement and say that the burger is the most perfect food in the world. It can be a quick and dirty, on-the-grill-game-day lunch. It can be a creative, even gourmet dinner experience. No matter what, it always goes great with a cold brew.

What happens, then, when the burger is the focal point of a craft-centric new restaurant on Pearl Street in our craft-centric city of Boulder? You get Eureka!, the newest addition to Pearl Street’s West End in Downtown Boulder and an all-American restaurant that specializes in putting an inventive craft spin on classic favorites.

Although they also have restaurant locations in California, Washington, and Texas, Eureka! resists the label of a chain. Ardent supporters of the local communities they establish themselves in, Eureka! makes a point to source ingredients, food items, and spirits from other local small businesses. This allows them to get a feel for the area’s culture and tastes in order to create unique regional experiences for customers. In Boulder, that equates to a huge appreciation for the craft food and beverage scene, and Eureka! works with local businesses such as Breadworks Cafe, Ozo Coffee, and, of course, Boulder’s craft breweries both large and small, to bring that craft culture to life, sweet, delicious life.

Having opened to the public on September 5th, Eureka! is the embodiment of the artisan quality yet down-to-earth attitude that is classically Boulder. With an expansive standing draft list and rotating menu of Colorado craft brews, accompanied by small-batch whiskeys and creative cocktails abound, Eureka! is an incredibly unique dining and drinking experience. I can’t say I’ve ever had a cocktail that smells like a rack of slow-cooked ribs, but order the Holy Smokes!, perhaps one of Eureka!’s most unique beverages, and you’ll be salivating as you open the lid to the mason jar it’s served in and get enveloped in the smell of hickory smoke-infused bourbon. Good luck trying to choose from the specialty cocktail list, which features flavors from sweet to sour and sensations from bubbly to slow-burning and much more. You quite literally cannot go wrong no matter what you choose.

The food at Eureka! is absolutely drool-inducing, and the burgers are the main draw. And oh, what a draw they are. From the Bone Marrow Burger (featuring bone marrow porcini butter) to the Jalapeno Egg Burger, the Cowboy Burger, or the Fresno Fig Burger (which includes melted goat cheese and fig marmalade), the burger is the canvas that Eureka! paints a savory culinary experience on, and you will be transported to burger heaven. Unexpected flavors make the Eureka! burgers dynamic and multi-faceted, and you’ll enjoy giving your taste buds an adventurous outing with their artisan spins on classic dishes.
