The best restaurants in Boulder, Colorado finally have the hardware to match the town's self-regard. Frasca holds the city's only Michelin star and won the 2025 James Beard Award for Outstanding Restaurant, the top restaurant prize in the country. Two spots carry Michelin Bib Gourmands, two hold Michelin Green Stars, and the openings keep coming. This is the list we would actually send you to, checked venue by venue in August 2026. A note on the awards before we start: these come from the 2025 Colorado Michelin guide, announced in September 2025. The 2026 guide has not landed yet, so every star and Bib below reflects the 2025 results.

The heavy hitters

Frasca Food and Wine (1738 Pearl St) is the one everybody has to reckon with. It is Friulian cooking from chef Lachlan Mackinnon-Patterson and Master Sommelier Bobby Stuckey, open since 2004, and it now wears both the Michelin star (first awarded in 2023, retained in 2025) and that 2025 James Beard win for Outstanding Restaurant. If you book one special dinner in Boulder this year, this is the room. Book early, and come hungry for northern Italy.

Corrida (1023 Walnut St, fourth floor) is the Basque-inspired steakhouse with the Flatirons view. Bryan Dayton's team runs it, dinner plus a daily tapas hour, and the kitchen now sources from its own regenerative cattle program, Corrida Cattle Co. Get a seat on the rooftop if you can. Oak at Fourteenth (1400 Pearl) keeps Steven Redzikowski's oak-fired oven and grill at the center of the Pearl Street Mall, with a Michelin Recommended nod to show for it. And Flagstaff House, up the mountain road at 6,000 feet on Flagstaff Road, remains the special-occasion room. Partners Chris Royster and Adam Monette swept the 2025 Best of Boulder wins for fine dining, service, and dessert. Dinner runs Monday through Friday, so plan around that.

Chef-driven and farm-fed

Blackbelly Market (1606 Conestoga St) pairs Top Chef winner Hosea Rosenberg's cooking with an on-site whole-animal butcher shop, and it holds a Michelin Green Star for the sustainability work along with a Recommended listing. It opened back in 2014 and still runs its own butchery in-house. Rosenberg's second place, Santo (1265 Alpine Ave), has done Taos-inspired northern New Mexican since November 2017 and is also Michelin Recommended.

Bramble & Hare (1970 13th St) earns its Green Star the hard way. Chef Eric Skokan grows most of the menu himself, sourcing something like 80 to 90 percent of the ingredients from his own 500-acre organic Black Cat Farm. The place has been at it since 2012, and the menu shifts with whatever the farm is actually pulling out of the ground that week.

The Bib Gourmands

Michelin's two value picks in Boulder both deserve the trip. Basta (3601 Arapahoe Ave), Kelly Whitaker's wood-fired pizzeria in the Peloton complex, has held its Bib Gourmand through the 2025 guide. It opened in 2010, and the Whitakers took home the 2024 James Beard Outstanding Restaurateur award for their Id Est Hospitality group. Worth saying plainly: Basta is a Bib, not a star. Cozobi Fonda Fina (909 Walnut St), from chef Johnny Curiel, nixtamalizes heirloom corn flown up from Mexico and picked up its Bib within a year of opening on July 10, 2024. Curiel was a 2026 James Beard finalist for Best Chef: Mountain, and you can taste why in the masa.

The newcomer worth the hype

Casa Juani (901 Pearl St) opened in late February 2026 from two Frasca alumni, chefs Eduardo Valle Lobo and Kelly Jeun. It is a Spanish marisquería doing seafood with a raw bar and jamón service, and it made a national list of most-anticipated U.S. restaurants before the paint dried. The room has been full since the doors opened, so this is a reserve-ahead situation, not a walk-in one.

Boulder classics

The Sink (1165 13th St) has been feeding University Hill since 1923, which makes it Boulder's oldest restaurant, and it is still the town's living room. The Boulder Dushanbe Teahouse (1770 13th St) was hand-carved by artisans from Boulder's Tajik sister city and gifted to the town. It is Michelin Recommended, open seven days a week, and still the most beautiful lunch in Boulder.

Jax Fish House & Oyster Bar (928 Pearl) has shucked sustainable oysters since 1994 as part of the Big Red F group. Sherpa's Adventurers Restaurant & Bar (825 Walnut St) has served Nepali, Tibetan, and Indian comfort food since 2002. And Zoe Ma Ma, Michelin Recommended for Edwin Zoe's counter-service Chinese, now lives at 919 Pearl Street after moving off 10th. Zoe opened a sibling restaurant, San San, in August 2026, so the family is expanding.

One more for the contemporary Italian lane: Stella's Cucina (1123 Walnut St) opened in 2023, is Michelin Recommended, and belongs on any short list even though it does not always make the tourist roundups.

Casual, in the best way

If you are feeding a group with different appetites, start with the food halls. Rosetta Hall (1109 Walnut St) was Boulder's first, opening October 11, 2019, and packs eight in-house stalls, two bars, and a rooftop with Flatirons views under one roof. Avanti F&B (1401 Pearl) runs the same multi-vendor idea with a rooftop bar at the west end of Pearl. Between the two of them you can settle almost any where-should-we-eat argument.

For the rest of the casual list: Centro Mexican Kitchen (950 Pearl), another Big Red F spot, owns one of the city's best patios and runs a daily happy hour plus weekend brunch. What is new and what is gone

Boulder tables turn over fast, and a couple of losses are worth naming. Bellota, Bryan Dayton's upscale Mexican spot, closed at the end of January 2026 after four years. The World Famous Dark Horse poured its last in March 2026 after 51 years on Baseline. Both were institutions, and both are gone, so do not go looking for them.

The flip side is a strong run of openings beyond the ones already on this list. Recent arrivals worth knowing about include Gemini (Spanish tapas from the Dayton group, 2024), Mister Oso in the Moxy hotel (2024), Temaki Joint for omakase (2026), and Morso, Hosea Rosenberg's Italian project out in Table Mesa (2026). None of these has the awards pedigree of the names above yet, but the pipeline is clearly not slowing down.
